These cookies are delicious! Easy, well, yes, but time consuming. They aren't a cookie you can just whip up on a whim.

The dough must be refrigerated for at least an hour. This isn't uncommon for cut out cookie doughs so I wasn't surprised by it, but I decided to try making the dough the night before I wanted to make the cookies. It got REALLY hard so I wasn't able to just pull it out of the refrigerator and go, it had to temper a bit.

Once rolled and cut the dough must again be refrigerated, for another 15 minutes, before baking. I was tempted to skip this step and just cut the baking time but since it was the first time I had made the cookies I followed the recipe exactly.

Once baked the tops are coated with powdered sugar and the bottoms are coated with Nutella and then you make the sandwiches.

I even made little sandwiches out of the cut out centers of the top cookies. You don't feel so bad about eating a dozen of those little cookies!

They are delicous, addicting cookes that are wonderful with a great coffee or glass of red wine.

UPDATE: I've made these again, this time not refrigerating the cut out cookies before baking. They turned out just fine! I reduced the baking time by a few minutes and couldn't tell a difference in the cookies so you can save yourself some time by skipping that step!
