Great idea for brunch. We loved the dipping sauce as well. Omitted cilantro due to preference, but otherwise unchanged. Froze several leftovers which make for easy breakfast to pull out. Recommend reheating in oven as opposed to microwave to maintain...

I don't usually bake, but couldn't resist these cookies. They were easy and super delicious. Disappeared very quickly. This recipe is a keeper!
