I had never cooked with Black Rice but was able to find a blend with it in Whole Foods. It has a very unique look and a great taste. The complete dish was not as tasty as I expected though. It was god but not great as I usually get from this book.

These were very good and very easy to make. With the prosciutto wrapped around the scallops it was a filling meal too. We found that three scallops was a very filling meal. I will make these again.

As with every other recipe in this cookbook - we loved these. Sauce was wonderful, a bit thick - but wonderful. I added about 5 tablespoons of water to it and it was still not a pourable consistency - we spooned it on. It probably depends on the size...
