Apple Ginger Muffins : page 36

These were a little disappointing. The recipe sounds good: "Apples mingle with the warm flavour of ginger". But they didn't quite work.

First, they were not quite sweet enough. 1/3 of a cup of brown sugar for 8 to 10 muffins (we actually got 12 modest-sized ones) is not much at all. Though there's some apple juice in there, it doesn't sweeten them that much. I'll try them again sometime and either increase the sugar to 1/2 cup or add 1/3 cup of white sugar to see how that helps.

Secondly, the ginger flavour was not terribly strong. We didn't have crystallized ginger for the muffin tops, but even so the body of the muffins wasn't terribly gingery. 1 and 1/2 tsp of ground ginger is likely too little.
