Moosewood Cookbook

This is one of my favorite Moosewood recipes - I've been making this for years. Full of flavor and great texture - a perfect comfort meal. The cottage cheese and eggs gives the dish a nice creaminess. I find Moosewood's pie crust recipe to be a little dry, but you use your own recipe. I've often omitted the caraway seeds and scallions.

This recipe is delicious. The potato crust is outstanding - very easy to make, and adds a nice balance to the dish. The sauteed cauliflower is delicious - let it cook long enough for the flavors to really come out. Try different types of cheeses - I've used a combination of cheddar and mozzarella.
