Tunisian Potato Omlet : page 80

A potato omelet spiced with caraway and coriander and served with a spicy tomato sauce. The caraway flavor is really good, although I can never find ground caraway and have to use seeds. I crush them with a mortar and pestle. Also, I reduce the amount of salt by about half. As written it is way too salty for my taste.

Another easy weeknight dinner from Simple Suppers. Can also be served as an appetizer.

West Indian Red Beans and Coconut Rice : page 69

This make a very good, hearty vegetarian meal. The only change I make is to add aobut 2 Tbsp. of tomato paste to make it a little thicker. Like all the recipes in this books it is a quick and easy weeknight meal.
