Baked Breaded Eggplant with Marinara : page 117

I love how easy this is! I have made this 3 times this summer- every time the crop share had eggplants! My daughters love the recipe too! The panko makes everything crunchy and they think purple food is cool!

I have saved two servings in the freezer for an easy lunch or late dinner.

Balsamic Chocolate Cookie Ice Cream : page 247

The kids helped make this recipe. They decided the vinegar was too much. And my nine-year-old dropping it from the freezer to floor did not help with execution. I might make it again with less vinegar but I doubt I will have help from the kids ;-(

Bangers and Mash : page 123

My husband and I decided this recipe is one to have the kids help in the kitchen. Everyone liked the meal. they thought cooking with beer was cool! There has been frequent conversation about when to make it again and what kind of sausage to use. It turns out the kids are not big fans of peppers inside sausage.

Cheater Chicken Curry : page 135

Delicious! It was simple to make yet tasted very exotic!!
I made this dish before verifying I had the coconut milk in the pantry. In a panic I substituted pina colada mix with vanilla yogurt. We loved it! My husband ate it so fast I was almost angry he did not savor it longer!!

Next time I will double the recipe so there can be leftovers!

Everything is right with this recipe. Why did I never think to mix steak and avocado?!! I marinated the steak then drove to my friends house whose father had recently passed. I could give her my full attention and needed only to flipped the steak once. We loved it and its simplicity made it comforting yet doable. I decided to gift her the book as well, a nice distraction after losing a loved one.

I had high expectations for this recipe since pasta dishes are a comfort food for me. I found the balsamic vinegar too strong for my liking. I would omit that ingredient next time.

North African Grilled Chicken : page 145

Loads of flavor and sooooooooo easy! My kids graded the chicken flavor: one 'A' and one 'B.' I may have overcooked it after realizing my grill ran out of gas and I had to get another tank from the smoker while the chicken waited but nobody complained!

Wow! This simple recipe was so much better than it lead on that I forced it into my father's mouth when he came in while I was cooking and he was very pleased-not easy to do with him. Even though i was missing the pine nuts and had to substitute kale for spinach, it was awesome! It will become a weekly staple meal in my home! I find most of the recipes in HFLL work well with all the substitutions I make and most of the ingredients I have on hand.

Wasabi Miso Glazed Salmon : page 103

My whole family loved this dish. We eat a lot of salmon. I thought the flavor was mild but I went easy on the miso so the kids would eat it without complaining! I thought the flavor was mild but my husband strongly disagreed with me and he loves lots of spice!
