The recipe made me realize I love beets. I make a few minor changes. Instead of mustard greens I use beet greens. And I add the greens to the risotto a minute or two before it's finished so the greens will wilt a little bit making them less garnish and more a part of the dish. I've also used feta cheese if I have no goat cheese on hand and the dish is also good with no cheese at all.
