Good recipe, easier prep than the Coffee Ice Cream recipe in this book. Coffee flavor is not as strong as the other recipe would definitely make coffee much, much stronger, when making it again. read more >

The recipe made me realize I love beets. I make a few minor changes. Instead of mustard greens I use beet greens. And I add the greens to the risotto a minute or two before it's finished so the greens will wilt a little bit making them less garnish and more a part of the dish. I've also used feta cheese if I have no goat cheese on hand and the dish is also good with no cheese at all.
