This is like the Wiki for Indian legumes, spices, techniques, and the "how to eat an Indian meal like an Indian family" cookbook. The photos are gorgeous! The multiple languages make it easy for a Not so Ex-Pat like me to eat authentic Indian food while I read about my beloved "wish I could visit" country.
I just literally read it from cover to cover and learned SO much.
This is my go to for all Indian cooking from here on in. Every recipe looks remarkable, is adaptable to standard or small crockpots, has multiple suggestions for vegetarian or veganizing, and sure seems authentic.
BEST part - shows how to slow cook beans without SOAKING! I can come home from work to a meal all ready!! From dried to yum in a few hours!
