Coconut Cupcakes from The Barefoot Contessa Cookbook

A recipe I use again and again. I don't fill the cupcake tins as much as Ina does otherwise the muffin tops overflow which I don't particularly like. Delicious. read more >

Barefoot Contessa Back to Basics: Fabulous Flavor from Simple Ingredients

I have made this recipe several times and follow it exactly. Pernod lasts forever so it's nice to have a bottle on hand for this recipe. This is great for a crowd.

With the ends sliced off and pieces served individually on plates this is not only a delicious dessert but beautiful to look at. I put slices in a little pool of caramel sauce. Wonderful!
