Love all of the flavor in this dish. I've also made this with quinoa instead of soba noodles - also delicious!

Loved these, I've made them a few times and they taste great. Mine do tend to be a little crumbly for whatever reason, but still make a decent patty (I like to eat them crumbled on salads anyway though!)

A simple, great salad. I like making this for holidays and other events - it looks pretty all assembled! The dressing is light and fits well with the salad. I've subbed in raspberries and I'm starting to like that even better.
