| This came out well - I feared that the cloves were going to be a bit overpowering but they mellowed during the cooking time. The bacon also worked better than I expected, acting as a subtle flavouring rather than a main ingredient. I might add a little more curry powder next time. I had it with Pois et Riz to add a bit more substance. |
| One of several versions of Rice and Beans in this book - I went for a version from Guadaloupe to go with a curry from the French-speaking part of the Caribbean. Flavour was very good and although I thought the appearance might not be great (since the rice is cooked in the red-bean cooking water which has a distinctly muddy aspect) it actually turned out fine, the rice ending up faintly pink. |
