This is a perfect salad for Christmas (Eve) Dinner if you're having Standing Rib Roast, Prime Rib or Beef Tenderloin. It is a heavy salad, but that way it doesn't get lost in the heaviness of the beef. I've been making this salad for over 20 years during the holidays. You can't miss with this one!

This festive salad is perfect during the holiday season. It is light, has surprising flavor combinations, and is always a hit at my table. My family always requests it, like I'm not going to make it anyway. The warm Champagne Vinegar dressing is a must! Substituting Sherry or White Wine Vinegar just doesn't give it the same flavor.
