The American Vegetarian Cookbook from the Fit for Life Kitchen

I really like this book, but I rarely follow the recipes exactly. The recipes are all vegan, and super-healthy. There is no refined sugar, and lots of hard to find ingredients, which I why I do a lot of subtitution.
While that does make it sound too difficult, if you like experimenting, it's good. I especially like it because it is vegan, so many vegetarian cookbooks rely heavily on dairy and eggs, and I like that this doesn't (and you can use dairy and eggs, if you so choose).
It's great if you are interested in learning more about vegetarianism / veganism. It introduces and explains a lot about the less than common ingredients. And it has a ton of nutritional info in it (and background info on the ethics and health aspects of vegetarianism).
