The New Enchanted Broccoli Forest (Mollie Katzen's Classic Cooking)
By Mollie Katzen
Ten Speed Press - 2000
The pudding is fantastic, but the instructions make things unnecessarily complicated. Pouring half of the hot chocolate mixture into the corn starch is pure silliness (and good luck disolving the starch that way). It's much easier to disolve the corn starch in a little bit of the milk first (soy milk works well, too) and then just stir that into the hot chocolate mix. Then the biggest challenge is to wait until it cools and can be devoured.

RAWvolution: Gourmet Living Cuisine
By Matt Amsden
William Morrow - 2006
These cookies are easy to make and delicious; true cookie goodness but much lighter and healthier. I didn't bother chasing down agave nectar but used honey or maple sirup instead which works just fine (if you are a raw purist than the latter options may not be for you). Some of the almonds can be replaced by other nuts like walnuts. The recipe suggests peeling the apples for which I see no reason whatsoever.
