Easy Cheesy Chili Chicken from Eating Stella Style: Low-Carb Recipes for Healthy Living

My husband enjoyed this a lot. It was easy enough for a weeknight, but I will have to tweak the seasonings some, as it was just a bit too salty for my tastes. read more >

Beluga Lentil Crostini : page 131

I thought this was a very creative idea. However, they didn't execute very well for me. A bit messy, and I am not overly fond of lentils, anyway, so that may have been the problem.

Big Curry Noodle Pot : page 107

This was fine, but I probably wouldn't make it again as I don't normally keep these ingredients on hand, since others in my house don't care for curries. I had to wonder why there weren't more vegetables in this. I added some shredded cabbage.

Gnocchi alla Romana with Sun-dried Tomatoes : page 105

I had never had this kind of gnocchi before but the picture looked good and you never know until you try. These weren't at all hard to make and tasted pretty good, with a nice cheesy crust. I'm not sure I'd go out of my way to make them, but if you have some semolina flour on hand, they make a nice meal.

Muhammara-Slathered Kabobs : page 102

I really enjoyed the sauce (slather?) that went with these kebabs. It also works well for chicken and steak kebabs -- we made three versions.
