I'd not tried Kabocha squash before, and there are very few kabocha-specific recipies, this one was the exception. The squash is sliced into narrow wedges, dredged in a sugar and spice mixture, sprinkled with soy sauce, and roasted. The result was a sweet-spicy roasted squash, but it could have been anything. That is, it didn't really inform me about Kabocha squash. The flavor mix was good, but not worth the trouble of the spice mix, narrow slices, or the dirty dishes. I've still got half a squash, and would love suggestions on how to prepare it.
