Paletas: Authentic Recipes for Mexican Ice Pops, Shaved Ice & Aguas Frescas

Grapefruit Ice Pops : page 25

The tart and slightly bitter flavor of grapefruit - in a frozen form on a stick!
These defined refreshing on a day when the mercury hit 99˚F. Simple to make (juice 1 1/2 fresh grapefruit, mix in a bit of simple syrup, freeze). The only hard part was waiting the 4+ hrs for them to be solid.

I was worried that the sugar would be noticible. Only my dh commented on the sweetness, and even he said it was the best popsicle he has ever had. We will certainly make these again!

Yogurt Ice Pops with Berries : page 40

Lovely yogurt - flavored with lemon zest simple syrup, and with blackberries. This dish was simple to make, low calorie, and refreshing for a day that nearly hit 100˚.

You know you want them - just make 'em.

We used fat free greek yogurt, and we didn't bother to sieve out the lemon zest.
