Apple and Watercress Salad : page 72

A fresh, crunchy salad - with an amazing blue cheese dressing with walnuts. Huge think slices of apple were gorgeously displayed over a bed of watercress. The blue cheese dressing was very delicious - with cider vinegar, onion, and yogurt. The result was a light salad with great texture, visually appealing, and excellent flavor.

Chocolate Orange Steamed Pudding : page 348

This is the dish that we will take to the next cookbook club meeting, and we decided to give it a test drive with a half batch. 13 Daughter selected this recipe because steaming a pudding seemed challenging.

Have you ever made a steamed pudding? The general idea is that a cake of sorts is prepared, poured into a mold or a bowl, covered, and boiled on the stove top. For this steamed pudding, we used a pyrex bowl, covered it with a piece of buttered parchment, and then a layer of aluminum foil, all secured with a piece of twine. Select a large enough pot to boil it so you can watch the water level.

But don't let me skip ahead. First, you make a chocolate sauce in the bowl for the cake. As it cools, you rotate the bowl so the chocolate is spread over the entire inside. We were only somewhat successful (at the end it cooled with half the chocolate at the bottom). The cake itself was a breeze - simple ingredients - but we substituted a blood orange for the orange, and a whole medium orange for a single large orange.

We cut the cooking time by about 10 minutes (given that it was a half batch). It came out of the bowl perfectly, and smelled heavenly. It was very moist, and the layer of chocolate sauce made a lovely sweet exterior. The cake itself was not very sweet - the recommended whipped cream would be the perfect addition.

Epic Roast Chicken Salad : page 104

A very good salad largely composed of chicken, bacon, and croutons. This is similar to this Zuni bread salad. However, I think the Zuni salad had much better preparation of the croutons, but the Epic Roast Chicken salad had a better assortment of vegetables.

Bites with bacon were especially delicious.

Jerk-Dressed Bristol Pork : page 156

An unusual pulled pork - moist and fully flavored.

This pork cooked all day in an interesting assortment of spices and apple cider. Spices included coriander, rosemary, cinnamon, thyme, allspice, ginger, etc. As it cooked, apple cider continued to be added to keep the meat moist. The end result was unusual and delicious.

The one odd thing about the recipe was that, after cooking, the juice, spices, and spring onions were supposed to be blended. This would have included the bay leaves - and so this step was ammended so the bay leaves were separated before blending.

Minted Courgette Soup : page 62

An amazingly good soup - we can only imagine having it with seasonally fresh zucchini!

Shredded zucchini and onions are gently sautéed for a long time (40 minutes) - this really did bring out the sweetness of the vegetables. Following this, sour cream, mint, chicken stock, and sharp cheddar cheese are added.

The resulting flavor was both rich and light at the same time. The mint was really amazing. Bowls were served with a single leaf floating in it - and the best bite included that mint leaf.

We will definitely prepare this again.
