Meyer Lemon Dutch Baby

A great idea - lemon, lemon zest, and poppy seeds in an eggy oven pancake.

There were some flaws in the recipe, though. It tells you that you'll use the juice of the lemon, but its not listed in the recipe, and it uses an over-complicated mixing strategy. The beauty of an oven pancake is that its a simple, one-bowl dish.

I added the juice from 1/2 of the lemon, and cooked in a hotter oven (425 instead of 400) for a shorter time (18 min not 30). It came out golden brown, but it was still a bit heavy. I think the flour:egg ratio is too heavily weighted to the flour.

We are big fans of the dutch baby. This was a nice idea which I will probably tweak to get it to work as we like.
