Stuffed Zucchini with spiced beef or lamb from Zaitoun

When it is zucchini time, it can be difficult to find something interesting. But this was both different and a total delight! Zucchini are scraped out and roasted. The "meat" from within the zucchini... read more >

Ham and Split Pea Soup : page 20

Very nice flavor, but a lot of steps.

In this recipe, you boil up your ham bone to make a ham broth, then add your split peas, cut and caramelize vegetables (onion, carrots, celery), add potatoes, and at the end splash a bit of balsamic on it.

This was very tasty. I only had yellow split peas at home, and wished for that lovely pea green color. The soup was very thick, but it was enjoyed by all.

I give it "only" a four because I'm not convinced that its that much better than a recipe that might require much less work.

Hot Fudge Pudding Cake : page 320

The stated goal for this recipe is a no-fuss chocolate pudding cake, however not only did the recipe fail for us, preparation is decidedly fussy! My 16-yr old son put this together, and it turned out a mess. Not only did it require five bowls to prepare (plus melting chocolate), but upon baking (and yes, he did use the correct pan size) it bubbled up over the pan's edges, spilling all over the floor of our oven.

Some of the problem might be that there were no altitude adjustments; we should have compensated, and its possible we made a mistake. I'd had high hopes for this recipe - coffee is used as the liquid and it should be a luscious mocha flavor. The crunchy baked drips that we pried off the outside of the pan, though, were very tasty - mocha crunch.

Quick Cinnamon Buns with Buttermilk Icing : page 248

Not universally enjoyed....

This recipe's speed is its crowning virtue. You make a typical biscuit recipe, pat it into a rectangle, layer on a cinnamon-clove-sugar-butter mixture, roll, cut, and bake. No long rising times required!

From start to serving, this recipe took me about 40 minutes (includes 5 minutes of cooling). I liked that they were not as rich as some cinnamon buns, and I really liked the addition of cloves to the sugar-cinnamon mixture. The frosting included cream cheese, which was also a nice touch.

However 13-daughter did not like the cloves, and so did not like the buns. So - if you are preparing this for someone with a sensitive palate, you might want to reduce the ground cloves.
