Peppered Pear and Goat Cheese Scones : page 33
A bit crunchy, sweet pear, tangy smooth goat cheese, and a bit of pepper bite, all in a tender scone matrix. These are amazing!
I used the full stick of butter, but then non-fat yogurt and non-fat milk (rather than whole milk), and it seemed to work just fine.
The best bites are those with both pear and goat cheese. The recipe says to break the goat cheese into walnut-sized pieces, and to coarsely chop the pear. When I make this again (and I will), I will cut the goat cheese into filbert-sized pieces, cut the pear slightly smaller, and perhaps use a big pear.
The author cautions you that the dough will appear dry. Its true, it is crumbly, but those mounds of crumbs bake into a loose, light, and delicious scone. I prepared these for my son's 16th birthday breakfast, and he is loving them.
Note that the recipe says to divide into 6 scones - instead I prepared 12 scones, and that worked well. Baking time was perfect.
