The Joy of Blueberries Cookbook

Blueberry Oat Pancakes : page 172

Nice pancakes, not too sweet, and lots of blueberries.

This recipe entails grinding up rolled oats to make an oat flour, to which you supplement the usual ingredients - eggs, all purpose flour, etc.

The resulting batter is heterogeneous - part very runny, and chunks with the oat flour. But soldier on - this funny batter will still make a very decent pancake.

Don't make these if you are in a hurry - the thin batter does rise and form a good pancake, but you cannot rush it.
