This slaw worked OK, but it wasn't outstanding. Cabbage and carrots are shredded, and the dressing is mayo based, but given a bit of a Moroccan flavor with cumin and mint.

Having been to Morocco, I have to say that a mayo-based slaw would not be very Moroccan. Nevertheless, the flavor combo was OK. I liked the mint (be sure to add plenty), and a little extra salt helped.

A small lean pork roast in a wonderful sauce and enough red onions for everyone! I had purchased one of those multi packs of pork roasts at Costco, and so my son tried this recipe. It calls for spice mixes, but we substituted rosemary, garlic granules, thyme, salt, and pepper.

The result was moist and flavorful.
