Pan-Fried Cheese with Potatoes and Fenugreek from 660 Curries

Very yummy and satisfying. The first time it came out too spicy and salty. The second time I cut the cayenne and salt in half. I think in the future I will add a little bit more salt. read more >

Braised Okra and Tomatoes : page 532

This is my favourite recipe from this cookbook so far (there are still MANY recipes left to go)! I'd never had okra before I made this, but I can't understand how so many people could dislike okra based on trying it prepared this way. It is somewhat spicy, so if you're sensitive try it with less cayenne and/or chiles.

Gingered Chickpeas : page 329

This turns out differently every time I make it. It is important not to overcook the chickpeas before you add them to the recipe, or else they won't absorb the sauce. This is a good simple chickpea curry that most people would like. Not too exciting, but yummy and satisfying and makes for excellent leftovers!
