| I love this soup. The curry paste you use can make all the difference. I like Thai Kitchen. I've had mixed luck with the sweet potato croutons. They don't always get very crispy. If you're making a double recipe you might want to put the sweet potatoes in the oven. |
| Vegan chocolate mousse is so much easier than the regular kind! You really don't need to bother using chocolate soy milk, the regular flavour works just as well since there's lots of chocolate from the chocolate chips. The amaretto is also optional, just add more soy milk. |
