Simple yummy brussels sprouts recipe. Roasting makes them taste really good and not at all like the brussels sprouts people have bad memories of!

Great recipe but takes a bit of planning ahead since it works much better with freshly cooked beans. Leftovers mushed onto pizza crust are also tasty!

Dairyless Chocolate Mousse : page 178
Vegan chocolate mousse is so much easier than the regular kind! You really don't need to bother using chocolate soy milk, the regular flavour works just as well since there's lots of chocolate from the chocolate chips. The amaretto is also optional, just add more soy milk.

I love this soup. The curry paste you use can make all the difference. I like Thai Kitchen. I've had mixed luck with the sweet potato croutons. They don't always get very crispy. If you're making a double recipe you might want to put the sweet potatoes in the oven.

I was a bit sceptical of this salad but was tempted to make it by the kumquats. It turned out to be delicious!

Big Curry Noodle Pot : page 107
This is my go-to red curry recipe. Really easy and delicious. Sometimes I add less water and serve it over rice. If you think you're going to have leftovers, don't mix the curry and the noodles together.
