Don't get me wrong this pie is very tasty, just not sure it's worth the trouble. If I could rate it 3 1/2 stars I would. I did enjoy the spice level of this pie and the crust was great but my apples cooked down to leave an empty dome of crust on top.
I made this pie over several days - crust one day, apples with spices next day and left in fridge overnight, and reducing the cider on baking day (third day). Otherwise I feel like I would have been working on this pie for hours, which for me was too much to be left for Thanksgiving day.
I prefer, and definitely recommend the Apple-Brown Sugar Pie from Macrina Bakery (also on BAs website). That pie IS worth the extra step of lightly roasting the apples.
In the future I may use the spices of the "Best Ever Apple Pie" but the technique of the Apple Brown Sugar Pie.
