A fresh-tasting, summery, grilled cheese sandwich made with Margherita pizza toppings as the filling.

It’s so simple, the flavour of the sandwich depends entirely on the quality of the ingredients: good mozzarella, tomatoes and bread are essential. Because I used homemade salt-free Tuscan bread, I made sure to season the filling well with salt.

Giada calls this her version of a BLT. It certainly isn’t mine, but it’s still quite delicious.

Zosia, looks and sounds delicious. What a coincidence I pulled my Everyday Italian from the shelf to give another look today. I've picked out several recipes I want to try since it's summer.

southerncooker, I've barely cooked from this book - I'm not sure why as some of the recipes look very good - and had decided to focus on cooking from this and Giada's Family Dinners over the next few weeks. So this is the first of many recipes I'll be trying.

I'm looking forward to your reviews...they'll help me decide what to make.
