Super-speedy, visually attractive and delicious - what else can you want?

This has become my favourite emergency recipe - also because it's four simple ingredients are so easy to remember. It is super-quick (10 minutes - only because the tagliatelle takes so long to cook), and due to the rocket (and in parts the goat's cheese) it tastes fresh, healthy and refined. I would even serve it to guests without batting an eye. Just perfect!

To mix, place the rocket in a bowl with the tagliatelle on top (and the pesto and goat's cheese somewhere in the middle, doesn't matter). Just don't put the rocket on top of the tagliatelle, that will make it much more difficult to mix.

If you wanted to you could probably substitute the goat's cheese with any other soft cheese. Blue cheese would probably work especially well. Or, if you don't have rocket, maybe try baby spinach?

I've lowered my high opinion of this dish a bit. The goat's cheese makes it taste sticky easily. Perhaps adding some pasta water might help, or a less sticky cheese...
