This bright orange soup was delicious. As a base, I used a potato-peel broth (from The Vegetarian Epicure). I used yams (didn't have sweet potatoes), a yellow onion, and a nice fat chunk of ginger. I also bought light colored miso to include.

The soup was complex, had a dominant ginger note, and also sweetness from the yams. I think it would have been better with sweet potatoes (not as sweet as yams), but it was still excellent. It satisfied my desire for ginger, and was enjoyed by all.
