This was so good with the egg yolk runny and stirred into the finished hash. Son likes his poached egg well done and hubby wanted a fried egg on his and they liked theirs as well. All three of us love hominy so I knew I had to try this one. I don't like county ham as much as hubby and son does but I liked the way it tasted in this after simmering with the bay leaf and peppercorns and then how it flavored the potatoes and onions. I will make this one again. I also love the tips Sara gives you on poaching an egg and when to tell if meat is fork tender. It worked beautifully. Be careful when making this hash and do as Sara suggests and either cover or use a splatter guard since the hominy tends to start popping a bit near the end.
