These were fantastic made from the Anytime Hoppin' John leftovers from page 222. Easy to make by adding flour, eggs and bread crumbs. You need to plan ahead though since once you make the cakes they need to firm up a bit by resting in the fridge for an hour before frying. We served ours like one of the suggestions of a bed of greens and some of the leftover salsa from page 102. Another suggestion I'd like to try is with a poached egg and some of the salsa. I'd make the Hoppin' John just to make these, they were that good.

What a creative idea for hoppin john leftovers (not that those leftovers are ever a problem in my house). This looks like a very useful cookbook!

QS, I'm really enjoying reading and cooking from this one. One year I made soup from my leftover New Year's meal and it was turned out very tasty.
