This is a very easy chicken soup with Moroccan flavors, quick to pull together and using mostly common pantry ingredients if you are willing (as I was) to sub a can of diced tomatoes for the three fresh tomatoes the recipe calls for. The recipe also calls for fresh cilantro and mint. Total time (prep and cook) is about 90 minutes.

This recipe is also available in the new Soups and Stews special issue of Fine Cooking. Unfortunately, it is not available at the Fine Cooking website unless you are a paying member.
