Amazing. I learned so much preparing this dish. Who knew that raw cashews could be made into cream? I almost substituted regular dairy cream (to stick with my locovore month), but I'm so glad that I didn't.

A cashew cream (more about it below) is spread on a plate, fresh figs, toasted unsweetened coconut (large flake), and chocolate are sprinkled on top. Thats it! The toasted large flake coconut added an important flavor and texture. Don't forget to toast it! For the chocolate, I minced up semi-sweet chocolate chips - it would be even better with a sea-salt dark chocolate.

If you don't like figs, I think this would also be awesome with raspberries.

The cashew cream was amazing. You have to plan ahead and soak them in the refrigerator for at least six hours. They are then rinsed, water added, and blended well in the blender. Sweetness in the form of agave nectar was called for, I used honey and a touch of organic sugar. Also salt, vanilla, and coconut oil are blended in. It was amazing, and I almost stopped there and ate it all myself.

I've since looked around the internet, and found that cashew cream is used in a variety of culinary applications. I'd be interested to hear about your experiences!

QS, as a vegan, I use cashews, or cashew cream a lot in savory and sweet applications. It's a very common substitute for traditional cream and cream sauces. One of our favourite ways to use it is for creamy pasta sauces.

Good to hear that - I will definitely be keeping this in mind, and stocking up on more raw cashews. Turns out my son didn't even realize it wasn't whipped cream!
