Even though this was for a simple supper we enjoyed them for breakfast. It suggested using cream cheese or Monterey Jack but I used a Mexican cheese blend and hubby and I both enjoyed them. I served it with sliced tomatoes, avocados and toast. There was a suggestion at the bottom to serve with tomato and avocado slices dressed with Cilantro Lime Dressing from page 225. Since hubby doesn't like cilantro I just served ours plain. Next time I might try the dressing for myself.
Delicious.
