Recipe Review

A dense moist cake that has no cholesterol and is somewhat low in calories. Why am I surprised this isn't a delicate and decadent dessert?

Pros: Easy, one bowl preparation, perfect baking time, and this cake came out of the pan flawlessly. The two glazes were easy to prepare and look beautiful. The orange zest and orange juice gave a lovely citrus aroma.

Cons: This is a dense and heavy cake, few would be surprised that half the flour is whole wheat. The chocolate taste was a mere whisper (1/2 C cocoa in the cake).

On the whole, this was a good cake, but probably not worth a repeat.

It certainly looks beautiful. Do you think the cake would be improved by an increase in the amount of cocoa?

Yes - it was a beautiful cake. I have not done enough vegan baking to know the right solution. Certainly the chocolate needs to be increased, and somehow if it could be made lighter... but I'm not a sufficiently sophisticated baker to know how to do this while remaining vegan!

I might play around with the recipe a bit to see if I can improve it. I love being able to make a cake in one bowl and the recipe that never fails me is the chocolate cake from The Joy of Vegan Baking. I just like the idea of some different flavours with the chocolate.

It would be great to have you come up with a way to make this cake shine! I would love to hear about your experiments.

Hopefully I'll be able to improve upon the original. I'm not baking as much right now (trying to lose a few pounds) but next time I plan a chocolate cake, I'll try this one.
