Recipe Review

I use a chemex coffee maker, but am somewhat haphazard in my method. I remembered Andrew saying that he weighs out his coffee, and so this set of instructions (not really a recipe), which includes a weighed amount of coffee and specifies water temperatures, intrigued me.
I liked that they suggest to rinse your filter, although the CHEMEX filters are already very, very nice.
I tried their suggested trimming of the filter to a circle (it comes as a square, which extends beyond the edge of the chemex's top). And I measured my water tempterature.
The described method does highlight one of the problems with chemex -- how do you measure the amount of water that you've put in it. This "recipe" suggests brewing your coffee on a scale so you can add a weighed amount. That is a great idea - if your scale will go that far. The side of my chemex has pieces of tape marking specific volumes that work for me, and I added the specified amount of water, and marked the pot's side.
I learned that I usually use water that is a bit too hot! I was very surprised.
The resulting coffee was very good. I only rated this a 3, though, because it was a very fussy method, and only marginally better than my usual morning brew.
But I should say - I do love my chemex!
