Mashed potatoes and mushroom gravy – the ultimate comfort food. In this recipe, the roughly mashed potatoes are baked atop the leeks and mushrooms in a creamy sauce.

The dish is somewhat demanding, requiring over an hour of prep time involving sautéing the leeks and mushrooms, simmering them in a sauce, and boiling and mashing the potato, and then almost an hour of baking. However, it’s also the perfect candidate for making ahead as all of the work up to and including assembling the casserole can be done in advance. I did that and then just baked the “pie” the following day.

I chose a rather (too) large baking dish so my layers were quite shallow and the cooking time was reduced. I baked it until the casserole was heated through, the sauce was bubbly and the top of the potatoes had formed a crisp, golden crust. With a smaller dish, I think I would have had a greater distinction between the layers.

Delicious, nonetheless.
