This review is mostly to document my experience with chia seeds in a smoothie.

I'm fascinated by seeds with a lot of mucilage, such as chia and basil seeds. This recipe has you mix chia seeds with spinach and kiwi, and blend immediately. I like the way these mucilagenous seeds thicken things, so I did it a bit differently. I put 1T chia seeds in about 1C skim milk, and let it sit for about 30 minutes. By then, the seeds were each like a ball of cooked tapioca. I blended the milk-seed mixture with a frozen orange, some additional milk, vanilla, and about 2 tsp vanilla.

This was light yet filling. I'm sure it would be even better with spinach and kiwi!
