Really pleased with these - they were simple to make and came out well. I made them without the optional added seeds but plan to try the seeded version. I initially left the dough a bit too long at the resting stage, with the result that it was drier and more inclined to crack than it should have been when I rolled it out. I gathered up the offcuts, crumbled them and added more water to make a moister, slightly sticky dough which was nevertheless easier to handle (with a good sprinkling of oatmeal to stop it sticking to the rolling pin). If they are to be eaten alone or with non-salty accompaniment I think they'd benefit from more salt than the recipe says, but accompanied by cheese they were just right.
