Berley's book is all about adaptation--taking local, seasonal ingredients, Rather than preparing the quinoa salad with the recommended main dish (striped bass or tofu), I served it alongside some cedar-plank grilled salmon.

The quinoa salad was good and Berley's directions were very helpful. I took his advice to not shock the green beans and was really pleased with the results, I will definitely use his technique in the future. I do think that, for my personal tastes, the seasoning could have been amped up a bit, but that's easy to remedy. All in all, it was a good base recipe for a nice, fresh salad.
