I have made this pie many times and absolutely love it - the cheesy scone-like topping is delicious, and it looks very impressive. I slice the tomoatoes by hand with no trouble. Make sure your dish has high sides becuase it will rise while it's cooking.

An easy but impressive looking lunch dish. Success depends on having a mandolin to slice the tomatoes, and an ovenproof dish of the right size.

A good winter standby using tinned plums, though getting the stones out of them is a bit of a pain (never seen ready stoned ones) - I always miss one. I find the suggested 10 minute headstart for the fruit isn't long enough, and give it 20 minutes before...

Scones can sometimes have a slightly 'gluey' texture, but not these which are made with half regular S/R flour and half wholemeal S/R flour.
