Straightforward and tasty -- the gorgonzola is not overwhelming at all. Still ... it's a bit boring and there is no visual interest at all. I wish I'd had a little Swiss chard on hand to liven this up both for the eyes and the taste buds.

The flavors here are spot on, especially if you have great apples and go ahead and spring for a really good aged cheddar. But the vinaigrette seemed to need a little something more. I suggest dressing this salad with Barefoot Contessa apple cider vinaigrette...
