I made this to go with the Grilled Sweet Corn, Zucchini, and Goat Cheese Quesadillas and it was delicious. I know this will be good with other things as well including tortilla chips.

My daughter and I loved these. I was afraid I'd loose all the fillings when trying to turn these on the grill but when I waited till they were a bit crispy and browned then turned better than I thought with a wide spatula and some guidance from my hand....
