This pepper-eggplant-onion relish was a bit better than the carrot pickles recipe I tried from this book, but it was still way too vinegary, and the sour was not well offset by other flavors. I think I am giving up on this cookbook.

Turned out inedible -- way too sour. I followed the recipe as written but since it used all vinegar for the brine (no water), I thought this might be the case. I am giving this cookbook 1 more chance, then it's 3 strikes, you're out.
