About me: I live in Colorado and cook for my family; my husband, my 20-year-old daughter (who is in college), and my 18-year-old son (a VERY picky eater). I love cookbooks and have quite a collection but am always looking to add more. I have been known to take a cookbook to bed and read it before falling asleep. Lately, I have found myself getting a lot of recipes off the internet and not using my cookbooks much. I would like to change this. I am anxious for this site to take off (and it will) and for the volume of recipe reviews to grow. It is such a great idea!

Skillet Blueberry Cobbler from Weber's Real Grilling

Excellent. We did overcook it slightly on the grill but we just need to get better at grill baking! Served it to a group of 5 and everyone loved it. read more >

Great Good Food: Luscious Lower-Fat Cooking

By Julee Rosso
Three Rivers Press - 1993

5th April 2011

Apple-Turkey Salad : page 430

Another quick to throw together salad (other than the 30 min marinating time for the cherries). Great taste - very unusual. I used chicken since it was what I had and was great!

Corn and Wild Rice Saute : page 178

Pretty easy to pull together. Fresh corn was definitely the way to go. I thought it had a tad bit too much of balsamic vinegar. Next time I would add only half what is called for.

Garlic Garbanzos : page 116

These are somewhat unique and add a different texture and flavor to an appetizer spread - but they didn't knock my socks off. They were ok. A little difficult to eat too - You have to stab the beans with a toothpick - next time I would maybe serve with a spoon.

Great Green Vegetable Tart : page 203

I thought that this was very good. I actually made two and I only have one spring form pan. I put the other in my tart pan which worked fine too - could hold the same volume too. Very good way to get lots of good green veggies.

Grilled Salmon and Green Lentils : page 228

The salmon was very good. Sweetness of honey and the tang of the soy. The lentils made a LOT. I would say more like 12 servings than 8. I will definitely only make half a recipe next time I make these.

Minestrone & Wheat Berries : page 336

This was a very good and unusual soup. I loved the added texture of the wheat berries. This soup is actually a pile of veggies with some broth. Very good and very good for you!

New Spanish Rice : page 523

Have made many times - very good!

Pork Tenderloin with Chanterelles : page 400

This is my go to recipe for pork tenderloin. The mushrooms are delicious but we most often make just the tenderloin. Just put the rub on the tenderloin, wait, and grill. Very flavorful and delicious - the sugar adds a little crust to it!

Regatta Stripes : page 204

A wonderful healthy version of chicken fingers.

Spring Green Pasta : page 45

This is the first recipe I made that uses her Low-Fat Blend. The pasta was good but not great. It could use a little cheese or something. I would make it again but would do a little tweaking.

Additional note: I added a little sprinkle of Feta when I ate this as leftovers and that was the little something it needed!

Spring Lentil Soup : page 27

This is a wonderful soup and as the name implies - perfect for spring. The cilantro and lime give it a fresh taste that is just perfect.

I would put slightly less than the 1/4 cup of lime juice added at the end as I felt it was slightly too limey.

Tuna and White Bean Salad : page 250

So easy and so good! I made with canned beans - I did not have time to use dried. It was great. I will definitely be making this again!

Vanilla Granola : page 14

Making this and eating this were both wonderful. The aroma in the kitchen (and the entire house) was cinnamony vanillay goodness! I made this to send to my daughter at college and she loved it too. I had to keep some for myself though and put it on yougurt every morning. Delicious!

White Wine Cake : page 455

This smells wonderful while you are reducing the wine and the cake is extraordinary. Very unusual and very good. This was our trial run for the holidays this year - we will be serving it!
