With an ingredient list twice as long and a heat level two to three times as high as the Burmese Curried Pork reviewed in The Asian Grandmother's Cookbook, this dish is for the hardcore pork enthusiast and heat lover. It's worth the time to seek out the ingredients, however, as, in addition to heat, this dish packs a great flavor wallop. I fed this dish to coworkers at a restaurant I formerly worked for and they were very enthusiastic. So was I. I would advise to even go ahead and obtain the mango pickle mentioned in the recipe as it provides an interesting acidic counterpoint to the richness of the dish. I have made this dish many times and it never fails to satisfy.
