Very successful recipe, and easy to follow. Only issue was that my oven is more powerful than Hugh expects the reader to have, so my dish required more careful oversight to avoid burning.

Like other recipes of Hugh's this one is a winner, and worked like clockwork. It's a bit odd to have pancetta in the risotto, but it added a lovely flavour that was very welcome.

This dish is one that I make so often that the book automatically opens to the page now. I have made it for Chinese people (I am not Chinese) who has pleaded with me to tell them which restaurant I got it from. It's stunning, and it has ruined me for ordering it out ever again.
