Slow-Roasted Tomatoes from One Good Dish

A dish that could not be simpler to make, and absolutely delicious. Topped the cooled tomato with a room temperature slice of mozzarella drizzled with EVOO and some ribbons of basil. A real treat. read more >

Rigatoni with Tomatoes and Eggplant

This recipe gets five stars from me for two reasons:
1) it's delicious with a surprising depth of flavor given the short cooking time, and
2) so little effort, such a satisfyng meal -- my husband loved it.

I made two minor changes to the recipe, using penne instead of rigatoni and adding a big pinch of red pepper flakes rather than the fresh or dried chile the recipe called for.

Apparently the original recipe came from a 2004 Jamie Oliver cookbook called Jamie's Dinners.

Shrimp with Three Dipping Sauces

I took one look at southerncooker's review of this recipe and knew it would be tonight's dinner. Just totally yummy. I too made all three dipping sauces ... in about 15 minutes. We grilled the shrimp which took maybe 3-5 minutes total -- sat down with a glass of wine, a napkin and our fingers and proceeded to enjoy the heck out of this dish.

My favorite was the lemon-chive mayo, my husband liked the sriracha, and we both agreed the garlic buttermilk was just fine but not as good as the other two. So I'll be pouring that one over two chicken breasts as a marinade and then grilling it up for tomorrow night's dinner.

I served this with the Spanish-style Tomato Toast [from Saveur, recently reviewed] and they went nicely together. Also a side salad of avocado and grapefruit.
